A curated dining experience at the new HOTA Gallery

Today we’re excited to announce a new dining experience at HOTA with Palette, an elegant restaurant which will be located on the ground floor of the new HOTA Gallery.

Palette is the final piece of the delicious puzzle of dining options here at HOTA, following the announcement of The Exhibitionist Bar, a spectacular rooftop bar and dining area on the top floor with incredible views of the Gold Coast skyline; while HOTA Café will remain the much-loved place for coffees and light lunches.

David Ashford, Head of Culinary Arts at HOTA, told us a little more about the experience you can expect at the new restaurant:

‘Palette, on the ground floor of HOTA Gallery, is our casual fine dining restaurant. You can expect all the great aspects of fine dining, fresh local high-quality produce with amazing provenance, with amazing knowledgeable staff but without any stuffy bow ties or waistcoats. There will be an extensive curated wine list with local and international favourites and the food will be modern Australia with an emphasis on local produce. There will also be a seasonal ala carte menu plus an exhibition set menu which will speak to the art in the major exhibition you’ve just enjoyed.

While the menus are still under development David was able to give us an insight into the guiding principles behind the food on offer:

‘The food philosophy will be very simple fresh seasonal and local, the emphasis will be on using only best season produce available. We will also dabble in native local ingredients and foraging and set up a chef’s garden in the HOTA precinct.’

We’ve also just announced that Dayan Harhill-Law has been appointed as Executive Chef, overseeing both Palette and The Exhibitionist Bar. With experience honed at The Star, Press Club, Dinner by Heston, Vanitas and Quay, David believes Dayan is the perfect fit for the new HOTA Gallery:

‘Dayan brings a great pedigree in learning from some of the great chefs not only in Australia but all over the world. He has a very clear vision for the HOTA Gallery and we can’t wait to see the incredible food he will produce,’ he said.

We are currently putting the finishing touches to the dining spaces, creating the menu’s and making sure that we’re ready to deliver a truly exceptional customer experience when we open.
